Cooper Tardivel, Mixologist at Mosaic, creates his take on the original Mai Tai.

Mai Tai Cocktail by Cooper Tardivel
 
Ingredients:

2 oz Amber Rum
1 oz Orange Liqueur
1 oz Almond Milk*
Lime
1 oz Dark Rum
Mint

To Create:

1. Fill a Boston Glass with ice.

2. Add 2 oz of Amber Rum, 1 oz of Orange Liqueur and 1 oz of Almond Milk.

3. Press the juice of half a lime into the Boston Glass.

4. Fill the Boston Tin with more ice and shake until chilled.

5. Pour into a glass filled with shaved ice and top with one 1 oz of Dark Rum.

6. Garnish with lime and mint.

*Almond Milk

Ingredients:

1 cup almonds
4 cups filtered water
1 tbsp honey
Salt

To Create:

1. Place almonds in bowl and fill with water – fully cover almonds with 1 inch of water above.

2. Soak for 12 hours or overnight

3. Drain and rinse almonds.

4. Place soaked almonds, water, honey and salt into a blender and blend until smooth. Strain through cheese cloth.
