Lemon Grilled Shrimp by Executive Chef Don Walker, Five Fishermen

Marinade Ingredients:
¼ cup extra-virgin olive oil
½ cup fresh lemon juice
2 cloves garlic – minced
1 tbsp minced fresh rosemary
Freshly ground black pepper
30 large size shrimp-peeled and deveined
8 “bamboo skewers
3 lemons

To Create:
1. Soak 10 8’ bamboo skewers in water for 4 to 6 hours. 
2. Combine all the marinade ingredients in a large bowl and toss with shrimp.  Allow to marinade for 30 mins. 
3. Preheat BBQ or grill to med hot. 
4. Skewer 3 shrimp on each skewer and place on grill.  Cook approx 3 mins per side brushing once with extra marinade. 
5. Remove from grill. 
6. Cut a lemon in half and place in the center of a serving dish cut side down.  Stick skewers into lemons in a decorative manner and serve with lemon mayonnaise cocktail sauce.

Lemon Mayonnaise Cocktail Sauce

Ingredients:
1 cup mayonnaise
1 clove garlic minced
½ cup sour cream
1 tbsp lemon juice
1 tsp lemon zest
1 tbsp chopped chives

To Create:
1. Combine all ingredients in a bowl until well mixed.
