Skewers with grilled shrimp

Lemon Grilled Shrimp with Cocktail Sauce by Executive Chef Don Walker

A barbeque classic with fresh citrus flavours.

Ingredients

1/4 cup extra-virgin olive oil

1/2 cup fresh lemon juice

2 cloves garlic, minced

1 tbsp minced fresh rosemary

Freshly ground black pepper

30 large size shrimp, peeled and deveined

8 bamboo skewers

3 lemons

Directions

1. Soak 10 8” bamboo skewers in water for 4 to 6 hours. 

2. Combine all the marinade ingredients in a large bowl and toss with shrimp. Marinade for 30 minutes. 

3. Preheat BBQ or grill to medium hot. 

4. Skewer 3 shrimp on each skewer and place on grill.  Cook approx. 3 minutes per side, brushing once with extra marinade. 

5. Remove from grill. 

6. Cut a lemon in half and place in the center of a serving dish cut side down. Stick skewers into lemons in a decorative manner and serve with lemon mayonnaise cocktail sauce.
