5 tbsp all-purpose flour
1/4 tsp ground cumin
1/4 tsp salt
1/4 tsp cayenne pepper
1/2 cup wheat beer
1 lb tilapia, haddock or cod fillets
4 tsp canola oil
1 lemon, cut in wedges
1. Combine flour, cumin, salt and cayenne in medium bowl.
2. Whisk in beer and mix until smooth.
3. Coat fish in batter.
4. Heat oil in non-stick pan over medium-high heat.
5. Cook fish in pan until crispy.
6. Serve on parchment paper with lemon wedges, sweet potato fries and curried mayonnaise.
