"We produce products that we can source using as local a product as possible. Our coffee comes from Just Us Coffee Roasters, who use Fair Trade coffee locally produced and distributed. Our fruits and chili peppers are all sourced locally, as well as our molasses, which we get from Crosbys in Saint John, New Brunswick.Everything is hand crafted in small batches on site."
"Our distillery sits on the edge of the Cornwallis River in Port Williams in the beautiful Annapolis Valley. We have partnered with 12 local farmers and producers to make our spirits. We use as much local product as possible. All of our products are produced in small batches using our 400 liter Muller still from Germany. Many of the farms that we use we can see from the distillery windows. We have a very transparent operation - visible into the production area where you can see the still, the tanks and all of the equipment that we use in order to produce our award winning spirits and liqueurs."
About the owner/distiller:
Russell is a Red Seal Chef by trade, and growing up in the Valley gave him a love of local. When he was growing up, he used to work for some of the farmers that we have now partnered with for our products. “Opening a distillery in this area was a dream of mine, and wanting to use my natural talents for making locally sourced award winning products has what it has turned out to be.”
