Directions
1. Soak the gelatin in 2 tablespoons of warm water for 10 minutes.
2. At the same time, combine the cream, vanilla extract and sugar in a saucepan; place over medium heat and bring to simmer. Turn off the heat and add the gelatin mixture; whisk.
3. Pour the mixture into 4 ramekins and cool in fridge. They should take 2-3 hours to set.
4. Serve topped with fresh strawberries and enjoy with a chilled glass of Jost Selkie.
