Parmesan Meatballs with Quick Marinara

A great pairing for smooth and medium red wines.

Ingredients

1/3 cup Panko breadcrumbs

1/4 cup milk

1 lb ground beef

1/2 cup finely grated Parmesan

2 tbsp chopped parsley

3 cloves garlic, minced

2 shallots, finely diced

1 tsp salt

1 egg, beaten

1 tbsp olive oil

1 cup crushed tomatoes

1 tsp brown sugar

3 tbsp basil, chopped

Salt and pepper to taste

Directions

1. Preheat oven to 350°F.

2. Soak breadcrumbs in milk until softened.

3. Add ground beef, grated Parmesan, parsley, 2 cloves minced garlic and half the finely diced shallot together.

4. Mix until combined. Roll into balls.

5. Bake on a parchment lined baking sheet until cooked through, about 15-20 minutes.

6. Meanwhile make a quick Marinara sauce.

7. Heat the olive oil in a small saucepan.

8. Cook remaining shallot until soft, about 3 minutes.

9. Add remaining garlic; cook another minute.

10. Stir in crushed tomatoes and sugar. 

11. Reduce heat and simmer 10 minutes.

12. Stir in basil.

13. Season to taste with salt and pepper.

14. Place sauce in bottom of glass and serve.
