Ingredients

1 lb lean ground beef

1/2 cup water

3 - 4 tbsp taco spice (to taste)

1/3 cup cheddar cheese, grated

1/3 cup Monterey jack cheese, grated

12 whole wheat tortillas

1/2 cup taco sauce

Shredded lettuce

Salsa

Sour Cream

Directions

1. Cook the ground beef in a frying pan. Once browned, add water and cook over medium heat until water is absorbed. Add taco spice and simmer for 5 minutes.

2. While beef is simmering, cut tortillas into circles with a round cookie cutter. Place the tiny tortillas in the bottom of a large, non-stick muffin tin.

3. Fill each tortilla halfway with spiced beef and top with a spoonful of taco sauce and mixture of cheese.

4. Bake for 10-12 minutes at 325°F, or until the exposed tortilla shells begin to brown.

5. Remove from oven, top with some shredded lettuce and taco toppings of your choice. Serve to your guests as finger food.
