Cucumber Rolls

A simple and easy appetizer recipe that is a good to match to Nova Scotian sparkling wine.

Ingredients

2 large English cucumbers

1 tbsp fresh ginger, minced

1/2 shallot, minced

1 tsp honey

1 tbsp rice wine vinegar

1/2 lime, juiced

1 tsp soy sauce

1/4 cup olive oil

1 tbsp sesame oil

Salt and pepper to taste 

1 Daikon radish, julienned

1 large carrot, peeled, julienned

Directions

1. Cut off ends of cucumber.

2. Using a mandolin or potato peeler, cut cucumbers into long thin strips and set aside.

3. Next, make vinaigrette by placing minced ginger, shallot, honey, rice wine vinegar, lime juice and soy sauce in a bowl.

4. Slowly whisk in olive oil and sesame oil. Season with salt and pepper to taste.

5. Place daikon, carrot and radishes in a bowl.

6. Add enough vinaigrette to just cover the vegetables and toss.  

7. Place a pinch of vegetable mixture close to the end of one piece of cucumber.

8. Roll the cucumber tightly and tie with a chive. Repeat untilcucumber is completely wrapped.
