The Charcuterie Platter

This year’s hottest culinary trend is also one of its coolest and it easiest to prepare. There’s no cooking involved with creating an award winning charcuterie platter, but there is a talent to present a melange of flavours that will entice guests to fight for the last piece of cheese. Rosé pairs well with a range of bite-size dishes that carry big flavours, such as olives or anchovies. But, it really hits its stride when matched with local charcuterie, whether it’s a selection of salty cured meats, terrine, pâté or a charcuterie board featuring a bit of everything.

Ingredients

1 small jar Maille Cornichons or Gherkin Pickles

1/4 cup peppered jelly

1/4 lb cold-smoked salmon

1/4 lb thinly sliced prosciutto

1/4 lb blue cheese

1/4 lb aged Canadian Cheddar

1/4 lb goat cheese

1/2 lb country style pâté

1 baguette, thinly sliced

1 package Carr’s Table Water Crackers

Directions

1. Place cornichons (or gherkin pickles) and pepper jelly in individual small bowls.

2. Decoratively place all the other ingredients on large cutting board or platter and wrap in plastic wrap; refrigerate.

3. Remove the platter 30 minutes before guests arrive.

4. Serve with a basket of sliced baguette.
