Moroccan chicken skewers

Cook these chicken skewers in batches. Have one large batch for the initial wave of guests and two or three smaller batches to pass around later in the evening.

Ingredients

3 lbs skinless boneless chicken breasts, cut into 24 strips

24 skewers, soaked

6 tbsp dried chilli flakes

6 tbsp warm water

3 tbsp garlic, crushed

3 tbsp paprika

4 tsp coriander seed, toasted and ground

2 tsp cumin, toasted and ground

4 tbsp fresh mint, chopped

3 red bell peppers, roasted, seeds and skin removed

1 tbsp honey

Salt and pepper to taste

Directions

1. Thread chicken strips onto skewers.

2. Soak dried chillies in warm water.

3. Combine water and chilli mixture with paprika, coriander, cumin, mint, honey and roasted red pepper and place in food processor. Blend until a smooth paste is formed.

4. Lightly brush the chicken skewers with the paste and season with salt and pepper.

5. Set your oven to broil.

6. Lay your chicken skewers on a lightly greased baking sheet.

7. Broil the chicken, turning the skewers once, for 6-8 minutes or until the chicken is browned and cooked through.
