Smoky Canadian Club maple salmon bites

Ingredients

4, 6-oz salmon fillets, skin removed

1/2 cup Canadian Club Maple Whisky

1/4 cup lemon juice

1 tbsp + 1 tsp maple syrup

1/4 cup chives, chopped

6 slices good quality smoked bacon, cooked, chopped

Directions

1. Combine Canadian Club Maple Whisky, lemon juice, 1 tbsp of maple syrup and chopped chives; mix well.

2. Pour marinade over salmon in a non-reactive container and refrigerate for 6-8 hours.

3. Combine remaining maple syrup and chopped bacon in a bowl.

4. Remove salmon from marinade and cut a 1-inch incision (don't cut all the way through the salmon) and carefully place equal amounts of the bacon and maple syrup mixture in each fillet.

5. Sear salmon fillets over medium-high heat until golden brown on each side.

6. Transfer to 400°F oven and roast for 4-6 minutes or until desired level of doneness.

7. Serve with roasted potatoes and seasonal vegetables.
