A great way to add a little pizzazz to carrots.
1 tbsp brown sugar
2 tsp paprika
1 tsp cumin seeds
1 tsp coriander
1/2 tsp salt
4 tsp olive oil
2 lbs carrots, peeled and halved lengthwise
4 tbsp crumbled feta cheese
2 tbsp each roughly chopped mint, parsley and cilantro
Preheat oven to 450°F.
Stir together sugar and spices. Toss carrots with spice blend and olive oil until evenly coated.
Place on a parchment or foil lined baking tray. Roast until tender and browned, about 20 minutes.
Serve on a platter garnished with feta cheese and fresh herbs.
