As the saying goes “when life gives you lemons, make lemonade.” Well, when life’s good and your fridge is full of fresh local berries, it’s also a great time to make lemonade. Ingredients

8-12 cups water
3 cups sugar
2 lemons

Syrup Variations

Raspberry Cinnamon Syrup

1 cup water
1 cup sugar
1 cup raspberries
1 stick of cinnamon

Strawberry Black Pepper Syrup

1 cup water
1 cup sugar
1 cup strawberries (hulled, halved)
1 teaspoon cracked black pepper

Haskap Anise Syrup

1 cup water
1 cup sugar

1/2 cup haskap berry juice

2 pods star anise.

Directions

Make lemon simple syrup by combining 3 cups water and 3 cups sugar in a pot. Bring to a boil. When the sugar has dissolved, remove from heat and add the peel of 2 lemons. Let steep for 30 to 40 minutes. Strain and then transfer to a large container and add 8 to 10 cups of cold water and slices of lemon.

Raspberry Cinnamon Syrup
Combine 1 cup water, 1 cup sugar and 1 cup raspberries in a pot. Bring to a boil. When the sugar has dissolved, reduce heat to simmer. Add 1 stick of cinnamon. Let simmer for 15 to 20 minutes. Let cool and then strain and transfer to a container. Be sure to use a fine strainer to remove seeds.

Strawberry Black Pepper Syrup
