Directions
1. For the chimichurri, add the herbs, shallot and garlic to a food processor.
2. Pulse until roughly chopped.
3. Add the remaining ingredients. Pulse just until combined.
4. Season to taste with salt and pepper.
5. Add a few tablespoons of chimichurri to a large freezer bag and add the steak.
6. Allow steak to marinate while you heat a grill to high.
7. Grill the chorizo until cooked through, about 20 minutes.
8. Grill the peppers until lightly charred.
9. Grill the steak 3 to 5 minutes per side.
10. Let rest 10 minutes, then cut the steak into four portions.
11. Slice each thinly against the grain.
12. Slice the chorizo.
13. Serve the meat and peppers on a platter with the remaining chimichurri.
