A shrub is practice of preserving fruits in vinegar and has been around for centuries. Shrubs can be prepared in advance, kept in the fridge and can be made with almost any seasonal fruit. No matter  the month, you can keep your cocktails local and seasonal. They also provide a great means to make flavorful, alcohol-free mocktails.

Ingredients

2 cups strawberries, hulled and sliced
2 cups rhubarb, diced
2 cups sugar
1 cup cider vinegar

Directions

1. Combine fruit in a large sterilized jar.

2. Cover with sugar and vinegar. Let stand for 3 to 4 days.

3. Place contents of jar in sieve set over a bowl. Push fruit with the back of a wooden spoon to extract as much fruit as possible.

4. Transfer to a sterile jar and refrigerate until ready to use.

5. Your shrub should last at least 2 to 3 months and up to 6 months in a well-sealed container.
