This is an award-winning recipe from Tea Sommelier, Margot Bureaux

Ingredients

1 tsp whole cloves

1 four inch stick cinnamon

1 tsp whole cardamom pods, broken

1/2 tsp whole allspice

12 fl oz triple strength steeped Assam Tea (or black tea such as King Cole)

1 cup sugar

12 fl oz vodka

1 1” piece fresh ginger root

3 slices orange peel

Club soda

Directions

1. Place cloves, cinnamon stick, cardamom and allspice in a bag and break apart to help diffuse flavours.

2. Combine the tea, sugar, vodka, ginger, orange peel and spices in a glass jar(s).

3. Although it seems like a long time, it is best to refrigerate for a week.

4. We promise, it is worth the wait.

5. Strain into a separate container.

6. Return to refrigerator.

7. To serve, pour 1½ ounces of the tea mixture in a Sherry or Glencairn (Scotch) glass.

8. Top with 1/2 ounce of chilled club soda.

9. Of course, you can omit the vodka if you prefer to make a non-alcoholic version of this drink.
