Baked Nova Scotia Blueberry French Toast

Ingredients

4½ cups mixed blueberries

3 tbsp simple syrup

3/4 cup cream cheese, room temperature

1 cup milk

3/4 tsp ground cinnamon

1/2 tsp nutmeg

1/2 tsp vanilla extract

1/4 tsp salt

3 large eggs

8 slices French bread

Directions

Combine berries and simple syrup in a bowl. Toss. Let stand for 30 minutes. Strain the liquid from the berries into another bowl and mix with cream cheese. Next, combine milk, eggs, cinnamon, nutmeg, vanilla and salt in a separate bowl. Whisk lightly. Soak bread slices in milk mixture. Place 4 slices of bread on a lightly greased baking pan. Top each slice with equal amounts of the cream cheese mixture and the reserved blueberries. Top with remaining slices of bread. Cover pan with foil. Place in an oven preheated to 375° for 45 minutes. Serve warm with maple syrup.
