Mexican Rickey aka Ricardo

Ingredients

1 1/2 oz Espolon Blanco Tequila

1 oz lime juice

1/2 oz simple syrup 

3 cucumber slices 

8 mint leaves, plus additional for garnish

Club Soda

Pinch of Salt and Pepper

Directions

Gently muddle mint leaves, lime juice, simple syrup and 2 cucumber slices in a Collins glass. Add tequila, top with soda and give a quick stir. Garnish with a pinch of salt and pepper, sprig of mint and place the remaining slice of cucumber on the rim, as a garnish.
