A great topping for Morris East’s peach and prosciutto pizza or serving alongside grilled flatbread as a unique appetizer.
1 egg yolk
1 tsp 100% pure maple syrup
2 sprigs of rosemary, leaves only, chopped
1 cup extra virgin olive oil
1 lemon, zest and juice
Sea salt to taste
Salt and fresh ground pepper to taste
1. Whisk together the egg yolk, maple syrup and rosemary in a glass bowl.
2. Slowly add oil to emulsify while whisking. Add lemon juice and zest.
3. Season the aioli with salt and pepper to taste.
4. Add up to a tablespoon of water if the aioli becomes too thick.
