Directions
1. Place simple syrup, aged rum and egg white in a dry cocktail shaker.
2. Shake hard for 10 to 12 seconds.
3. Strain into a chilled coupe glass.
4. Add sparkling wine.
5. Garnish with freshly grated cinnamon and rosemary skewered cranberry.
*To make baking spice simple syrup, place 1 cup sugar, 1 cup water, 1 cinnamon stick and 3 cloves in a pot. Bring to a boil. When the sugar has dissolved, remove from heat and let steep for 30 minutes. Strain to remove spices.
