How to cook with wine.
Cooking with wine is a great way to enhance flavour. Most (but not all) of the alcohol evaporates during the cooking. So it's not about adding alcohol to the dish, it's about adding the depth of flavour that comes with the wine you add.
Always cook with wine you enjoy drinking on its own. A good wine enhances or intensifies the flavours you’re cooking with. Use white wine in dishes you would pair with a glass of white, and red wine in dishes you would pair with a glass of red.
Add wine early to your sauce or marinade and let it simmer with your other ingredients. To make a wine reduction, cook wine slowly over low heat.
