The Grilled Peach and Pancetta Salad features grilled peaches, sautéed pancetta and a fresh, torn mozzarella ball.
3 peaches, pit removed, halved
2 tbsp butter, melted
4 cups arugula
150 g pancetta, sautéed
1 fresh Mozzarella ball, torn
1. Preheat barbecue to medium.
2. Brush peaches with melted butter.
3. Grill core side down for 2-3 minutes. Remove from heat and let cool.
4. Slice peaches and place in airtight container.
5. Place arugula and sautéed pancetta in separate containers in a picnic basket, along with grilled peaches, fresh Mozzarella and lemon vinaigrette.
