Orange Chipotle Chicken Skewers with Avocado Cream

A great match to rich and full white wines.

Ingredients

1 chipotle in adobo sauce, finely chopped or pureed  

1/2 cup orange juice

1 tbsp maple syrup

2 cloves garlic, minced

1 tbsp vegetable oil

1 lb chicken breasts cut into 1 ½-inch pieces

8 small wooden skewers, soaked at least 1 hour

1½ ripe avocado

1 lime, juiced

2 tbsp cilantro

1/3 cup yogurt

Salt to taste

Directions

1. Whisk together chipotle, orange juice, maple syrup, garlic and oil.

2. Toss with chicken.

3. Let marinate in the refrigerator for at least 15 minutes and up to several hours.

4. Heat grill to a medium high heat.

5. Alternatively, preheat the oven to 450 °F.

6. Thread chicken onto skewers.

7. Grill chicken 4-5 minutes per side.

8. Meanwhile combine avocado, lime juice, cilantro, and yogurt in a blender.

9. Blend until smooth.

10. Season to taste with salt.
