Game Day Cheese Balls

These are not only a great game day treat, but a great way to use up leftover mashed potatoes.

Ingredients

3 cups mashed potato

3/4 cup chopped, crispy bacon

1 cup grated cheddar

2 seeded and chopped Jalapeños

1 tsp smoked paprika

1 egg + 1 egg yolk

2/3 cup flour

2 cups panko

6 to 8 cups vegetable oil

Directions

1. Combine mashed potato, bacon, cheddar, Jalapeños, smoked paprika, 1/3 cup flour and egg yolk in a bowl.

2. Mix thoroughly. Refrigerate for 1 hour. Form the mixture into approximately 30 balls.

3. Make an egg wash by combining an egg with a tablespoon of water.

4. Place 1/3 cup all-purpose flour in a bowl and a separate bowl place the panko.

5. Dip a ball in flour and shake off excess.

6. Then dip in egg wash and finally roll in panko. Repeat until finished.

7. Place vegetable oil in a heavy pot or deep fryer — the oil should come up approximately 1½ inches from the bottom of pan.

8. Heat oil until it is hot but not smoking (about 350°F).

9. Lower the balls in batches into oil. When the balls are golden brown on all sides, remove from the oil and set on paper towels until ready to serve.

10. Cook them ahead of time and then when ready to serve, place in an oven for 4 to 5 minutes at 375°F.
