Directions
1. Preheat your barbecue to a medium-high heat (450–550°F).
2. Lay the slices of bread on a baking sheet. Brush the top of each slice with melted butter and season with salt and pepper.
3. Turn over half the slices of bread. Place equal amounts of grated cheese, a slice of prosciutto, apple slices and sliced red onion on the unbuttered sides of the bread.
4. Top with the remaining bread ensuring the buttered sides are on the outside of the sandwiches.
5. Place sandwiches on barbecue and top with a heavy pan to weigh down each sandwich.
6. Grill for two minutes. Remove the pan and flip over the sandwiches. Place pan back on to the sandwiches and continue to grill for two minutes.
7. Remove pan and sandwiches from grill. Slice sandwiches in half and serve with potato salad.
