Maple Mustard Glazed Cedar Plank Salmon

Maple Mustard Glazed Cedar Plank Salmon

Ingredients

¼ cup maple syrup

2 tbsp whole grain mustard

2 tbsp soy sauce

¼ tsp black pepper

1 ½ lbs salmon fillet, skin on or off

1-2 cedar planks, large enough to fit the salmon fillet

Directions

1. Mix the maple syrup, mustard, soy sauce and pepper.

2. Pour over the salmon. Soak the planks in water for at least 30 minutes.

3. Allow the salmon to marinate in the refrigerator while the plank soaks.

4. Remove the salmon and reserve the marinade.

5. Pour the reserved marinade in a small saucepan.

6. Heat to a gentle simmer and cook until reduced and syrupy.

8. In the last few minutes of grilling, spread the glaze over the salmon.

9. Serve the salmon on the plank accompanied by any remaining glaze.

Cooking cedar plank salmon:

1. Soak cedar plank(s) in water, for at least two hours, using a can or jar to weigh down the plank(s). Drain water.

2. Heat a gas or charcoal grill to high heat. Place the plank on the centre of the grill.

3. When the plank starts to smoke, flip it over and then place the salmon skin-side down on top of the plank. Close the lid and cook the salmon for 15-20 minutes or until salmon is cooked to desired doneness.
