Spicy Lobster on Potato Crisps

Ingredients

1 cup vegetable oil

3 medium Yukon Gold potatoes, washed, sliced into discs

Sea salt to taste

3 cups cooked lobster meat, chopped

1 tbsp smoked paprika

6 basil leaves, finely chopped

1/4 cup extra-virgin olive oil

1/2 cup sour cream

Directions

1. Place the vegetable oil in a medium skillet and heat until oil reaches 350ºF.

2. Add potato slices and fry until crispy; remove with a slotted spoon and place on a paper towel lined plate to drain excess oil. Season with sea salt.

3. In a bowl, combine the lobster meat, smoked paprika, basil and olive oil; toss.

4. Place the potatoes on a platter and top with a teaspoon of sour cream and a spoonful of the lobster mixture.
