Ingredients

2 tbsp butter

1 lb stewing beef, cubed

Flour

Pinch salt and pepper

8 to 10 pearl onions,  skins removed

1 can (440 ml) Guinness Stout

4 cups beef stock


Directions

  • Place a Dutch oven or large cast iron pan over medium-high heat.
  • Dust beef in flour and season with salt and pepper.
  • Add butter. When butter begins to bubble, add a third of the beef.
  • Brown the beef on all sides.
  • Repeat until all the beef is browned.
  • Return the reserved beef to pan. Add the onions, Guinness and beef stock.
  • Bring to a boil and then reduce to a simmer.
  • Cover and cook over low heat for 1 1/2 hours.
  • Serve with boiled potatoes and seasonal vegetables.
