Created by the head bartender at The Middle Spoon Desserterie and Bar, this cocktail celebrates the honey and citrus flavours of summer.

Ingredients

3/4 oz fresh lemon juice
3/4 oz honey chamomile syrup*
1 oz gin
1/2 oz Tidal Bay Wine

*Syrup: combine half a cup honey, half a cup sugar, 1 cup boiling water and 2 chamomile tea bags. Steep for 10 minutes, remove tea bags and let cool.

Directions

Shake all ingredients with ice.

Strain into a stemmed glass and garnish with orange zest.
