Tomato with Olives, Lemon & Capers

Ingredients

8 slices bread
8 slices vine ripened tomato
Sea salt
8 green olives, pitted, finely chopped
1 tbsp capers
1 tbsp shallot, diced
1 tbsp lemon juice
1 tsp lemon zest
1 tbsp olive oil

Directions

1. Set slices of bread on a platter. Top each with a slice of tomato. Season with sea salt.
2. In a separate bowl combine remaining ingredients.
3. Spoon equal amounts of olive mixture onto slices of bread. Skewer with toothpick.
