Directions
Place the butter, jalapeno, lime juice, lime zest, cilantro and honey in a food processor. Blend until smooth and well combined. Heat a charcoal or gas grill to high heat. Add a small spoonful of butter and equal amounts of the cheese to each oyster. Place on grill, close the lid, and cook just until the cheese melts, about a minute. For those that prefer more cooked oysters, cook an additional 3 to 5 minutes.
*For those that prefer not to brave the cold, place oysters on a baking sheet and set in an oven set for 450 °F. After the cheese is melted, remove from oven and serve.
