Ingredients

1/2 oz Ungava Gin
1/2 oz rosemary simple syrup*
1/2 oz lemon juice
3 oz sparkling wine
Rosemary sprig for garnish
Caramelized sugar ring garnish (optional)

Directions

Place gin, syrup and lemon juice in an ice-filled cocktail shaker. Shake and strain into a cocktail glass. Top-up with sparkling wine and garnish with a sprig of rosemary and caramelized sugar ring*.

Rosemary simple syrup directions: Place 1/2 cup sugar, 1/2 cup water and 5 rosemary sprigs in a pot. Bring to a boil, then reduce heat to low and let simmer for 10 minutes. Let the syrup cool. Strain to remove rosemary sprigs. Refrigerate for up to three weeks.
